Saffron is a golden-colored, stigma (thread-like parts of the flower) that is used mainly as a seasoning and coloring agent in food. It has a distinct aroma and is considered an amazing flavor enhancer.


Adding a small amount of saffron gives food a rich taste and color. Saffron has a pungent, musty taste.

The process of crushing and soaking saffron releases the maximum amount of flavor from the threads. So in order to use saffron, crush it into a powder using a mortar and pestle and then soak the crushed saffron in warm water or milk.

  • Since saffron is an expensive product, the saffron available in the market has many adulterants (like- saffron with yellow styles, safflower, and dyed corn stigma)
  • Quick water tests for authenticity- Pure saffron gives yellow color in water whereas fake saffron gives a light red color.
  • Fake saffron looks shredded and has irregular threads with disconnected tendrils and pieces of bark mixed into the package. The scent is also not very strong and usually smells like bark.
  • Too much yellow color and moistness are both signs of lower grade saffron.
